You can, yes. Most everything on d20pfsrd is written to be setting-agnostic, though that can make it hard to cross-reference if you're also trying to look it up somewhere else.

Well, the thing is that most of the stuff like regional traits, religion traits, and a lot of the more flavor-based archetypes are shackled to specific Gods, nations, or other things from Golarion. You'd basically need to take them as they come and re-jigger them so they fit in Greyhawk.

I honestly don't know much about the setting, beyond what I got in the 3.5 PHB and through reading 1d4chan, so the best I can say is that it's not going to be all that hard.

How do you guys find games to play?
Gamefinder threads are pretty cancerous and the idea of using the Roll20 LFG scares me

For better or worse, /pfg/ turned in on itself and started making games almost exclusively for people who browse /pfg/ and their friends on Discord.

It's resulted in a glut of games over the past half-year, slowed down now that most of the more proactive players and GMs have full schedules.

I don't; my GM Dom tells me what I'll be playing each day after I finish giving him his morning rimjob.

The Roll20 LFG is actually usable. You definitely need a lot of patience and vigilance, but I have had more good games than bad using it.

Make sure you replace Asmodeus's game mechanics with another deity's because whether or not a character is a god is a pretty big deal.

The Pathfinder LFG community is surely better than 5e is right now. You do need to avoid games with red flags, and if you're the GM, you need to screen each applicant with some kind of interview using the same medium (text, voice, video) as the game.

I only have 1000 hours and my experience with Roll20 has been reasonably good.

It's really easy to sort out games where people have a semblance of having shit together vs ones that don't. Even my worst Roll20 experiences were mediocre.

You still Smite Evil, but now have Precise Strike in addition (ie add 2-3 times your level to each attack).

You can add Cha to attack rolls and saves (and AC in a bad way but you can also get a huge attack roll and parry things) so your Panache stat is absolutely not a waste anymore.

You have Lay On Hands and Channel Energy, Detect Evil and fear immunity.

You still have Divine Bond, so you actually have the 100% mandatory-to-function Keen enhancement provided by your class in addition to lots of bonuses, or a mount to do enormous damage with (none of the deeds stop working while mounted).

Maybe it's worse than Paladin casting? But it's as naturally damage-focused as melee classes can get, actually serves some useful purposes outside of hitting, and can fully put its stats to use. Swash isn't a high bar but these things are actually all it needed to not be a total failure.

In the majority of cases I'd gestalt Sorcerer instead of some other caster for their bloodline arcana.
You've specifically excluded bloodline arcana from the bloodline poaching option.

Blood arcana is certainly important. I excluded it because know of people who abuse the shit out of it.

However, now that I think about it, most people who abuse it go crossblooded for double the arcana. You can't do that with this system, so it should be safe to allow anyone to get one bloodline arcana.

How do mythic paths work?

You take what they give you and slap it on top of what you already had.
If you want a more specific answer you'll need a more specific quesiton.

Possibly, but it's not going to be a sharp, direct change so much as a gradual slide, events just piling up one by one as he slips into being Neutral, then Lawful Neutral, then finally LE. And that'd probably have to be a long fucking war for all that to happen.

Wars are constant, only briefly interrupt by (on year-long) truces, so its all fine.
