My DM recently gave our 3rd level party a spellscroll of creation.
The spell says it can create a 5-foot cube of material and precious metals last for one hour.
According to a volume to weight calculator I found, a 5x5x5 cube of gold would weigh 150,000lbs and as one pound of gold = 50gp in the players handbook, we would have 7.5 million gold.
The thing is that gold created by the spell only lasts for an hour.
So we are coming up to the big capital city soon, what's the best thing that could be done with 7.5m gold in one hour?
It's also worth noting that my DM has a setting where magic is outlawed in our current region. So I couldn't buy magic stuff at this city but apparently there's a big magic friendly city north of where we are. In case magic items were part of the plan.

It sounds like you are about to remind the people of that region why outlawing magic was a good idea.

Well it says you can create multiple objects so I assume that as long as the total does not exceed a 5x5x5 cube it's ok.(I hope)
Also we are not on the greatest terms with the law already, so hopefully it would be a buy everything in sight then run away with it.

This may not be terribly fun or adventurous, but it's worth considering creating silver coins as well as/instead of gold coins. Go to money changers saying you found a bunch of them and want them exchanged for gold coins. That'd get you some permanent money at least.
If you want to have a bit of fun, buy a whole bunch of fancy gifts then pull a Prince Ali and get hitched to a local princess/lady. With some clever planning and whatever money you could scam up you could cement yourself as royalty.
A house would obviously not be wise, but a boat or other transportation would work just fine. If you're going to get bold make sure you have an escape plan.

Bribes upon bribes upon bribes. But not as yourselves obviously, but rather as rivals, known criminals, or an enemy that your party hates. Use the gold to bribe as many people as you can while disguised as them, so when the gold fades, that person or group's reputation is tarnished and who knows? Maybe they now have someone out looking for revenge. Those guards were going to use that money to pay the cleric to heal their sick mother. That merchant only told you those secrets because the money was going to be used to replace that which he pilfered from guild coffers. That elected official only made those promises because....well...greed.

It's really dependent on what kinds of things you could buy for 7.5m gold. Any reasonable purchase at that scale would require a few days to complete the transaction (no sane tradesman or banker would want to be shortchanged by a million or two, so all of it would need to be counted)
My first thought was to commit mass fraud, where you make a bunch of small purchases with the fake gold.

If you have Shape Metal and a talented metalworker in the party you can make it into coins.

Gamble as much as fast as possible. Even if you get 10% back you end up with permanent 750,000 gp and the eternal hatred of the casino/syndicate you just cheated. Alternatively you could get a flying mount and fly as high as possible above the capital. Then use the scroll to create the densest material your GM allows you to make and watch as the capital turns into a crater. Then demand your GM to give XP from all you have slain.
Honestly don't do it, it's a dick move. But just 5' cube without other restrictions sounds kinda stupid and easy to exploit.

I think you are missing thye very important part called "Minting" where the molds for minting coins is sealed far into the deep coffers of the king of the land where its only ever brought out to make new coins

Buy horses because you will be an outlaw as soon as the money disappears. Buy disguises too, plenty of them.
Maybe buy a cart and lots of food rations for over a month. Buy a sailing ship too, perhaps?

Everything eventually goes poof, but some stuff takes longer to disappear than other stuff. Vegetable matter lasts for a day, stone lasts 12 hours, precious metals last an hour, gemstones last 10 minutes, and adamantine/mythril lasts for 1 minute.
