The very first thing every planeswalker should do is identify what kind of magic they have particular talent for, and study the fuck up. I'd visit planes with vast repertoires of magical lore and make sure I can do what I can do with exceptional proficiency.

Then I'd go exploring. Pre-Fuckening Zendikar seems like a good place to start.

White on its own, in fluff, can actually just shoot light at people. The restrictions of "destroy creatures of [insert size] and over" and the like are less about what the magic can do, and more about what a White mage is likely to be doing with that magic.

Also, by all counts, the Fountain of Youth is largely forgotten and hidden in plain sight in a random no-name abandoned village on Dominaria. Even the OldWalkers who populated Domonaria during the Ice Age didn't know about it, despite it being the source of Jodah's immortality. She can hardly be blamed for not knowing it existed, much less where it was.

Given the resources she had access to and the situation she was in, her decisions aren't TERRIBLE, though she could have done with a bit more legwork before commuting to a particular immortality plan.

You can do it as many times as you have the energy to do so. For some, this will be functionally at will. For others, they'll get tired fast.
