I have my desert people riding scorpion, for long Travel they put tissues on the tails to protect them from the sun.
Also they are commonly using them for ambush,using a special whistle making a sound which can only be heard by the scorpion fuckers are huge but stealthy as they can bury themselves in sand(i dont know if scorpion Can do that or if they can even hear anything, I just go with rule of cool in certain cases)

Giant Deer are always great for elves. I like giant Capybara too, either as pack animals or just livestock
