It all comes down to the weight of responsibility between player and GM. All the players have to do is show up to the session whereas even the laziest GM has to put some work into their game. Since the players never see the amount of work a GM has to do it gives the the mistaken assumption that the GM simply conjures the game up out of thin air with ease and thus lessens their appreciation for his work. On top of this many players, unfortunately, enjoy the power trip TTRPG's give and demand the GM essentially jack them off.

at some point, it was decided that the storytelling was the most important part, that YOU had to tell YOUR story. that the game and the mechanics were completely optional if it didn't bow down to the almighty story. think of all the posts you've read here or anywhere agonizing over character concepts, not about how the character fits into the game or the party, but the individual character.

subservient GMs that "are happy when they are happy", aka matt colville GMs. player satisfaction is a necessary but not a sufficient condition. these GMs cuddle their players, making them spoiled and feeling entitled.

C'mon, tell us what happened. We won't bite much if you're actually in the right.
All I want is to create the character I want.
Give me a list of the options. Tell me what I can and can't do. Let me put the stats where I want. Let me pick the race. Let me pick the class. Stop trying to suggest races and classes and trying to push options on to me. I will listen and probably accept any suggestions I am given after I create my baseline character.
This is the only thing I feel a player is entitled to. I give my players that and I when I'm playing I want just that.

I mostly just say that as a cop out answer. I don't want to physically tell the players I had fun throwing X, Y, and Z at them because once I open my mouth I won't shut up. I'll end up telling them stats and I might end up telling them what's in the future.

Those aren't unreasonable things to ask, its not like hes telling an existing GM to change his game. All he's doing is trying to put together a game, some people legitimately like GMing.

Let me tell you a story.
I started a Pathfinder campaign.
They wanted political intrigue.
Well one player did, and the rest agreed.
Not the campaign I really wanted to run.
But I did it.
We finally get to the political intrigue part, and what does the player who requested it do?
He goes upstairs to play video games.
Now I am looking for a way to end this PF campaign but I've run it for a year now so I feel invested in it as well.
Do not let players set the expectations. Run a good game, they will adapt. If they want to control things so much, let them be the fucking GM.
I'm now a little concerned. I'm in a West Marches style game where the campaign's goal is to explore the nearby area and find loot/monsters/adventure. As I participate in these adventures I take the individual specific goals of my character and try to progress those during the journey, while assuming that my companions are doing the same. Are you saying I should focus more on achieving their goals as well? I mean if they asked me for help I'd be happy to, but no one has approached me in or out of character.

Because they never GMed in their lives. Reverse the roles at least once and they'll slowly change.

This can absolutely work, but it has to be established beforehand that you're running a sandbox game and not really running your own story.
