My GF really likes roleplaying and I usually make stories for her so she can play some kind of slef-insert and then have her romances and whatever, but she's at the same time too stupid, too smart, too tsundere, and too yandere. I really don't know how to deal with her.

Just copy them from whatever anime or visual novel she is from.
Court intrigue. If she really wants to rp drama, have her as a noblewoman in the midst of a backstabbing degenerate court. Preferably insert a double of yourself as the handsome and cunning prince.
Nothing gets off my dramaboner better than the emotional torque of watching someone execute a romantic rival.

That's a good idea as she's really into french nobility and the like as an aesthetic. The problem playing court intrigue with her is that she doesn't understand the most simple rules of social etiquette and how people think but at the same time she's incredibly paranoid and she's stupidly good at seeing a trap coming or preventing any bad thing happening to her characters, which means she's very likely to avoid any conflict that other characters try to bring to her, but at the same time she'd constantly put herself in danger by acting stupid in front of everybody.

Instead of backstabbery, make it a unified court for her to break. Let her develop romances, let them spin out of control due to jealousies, let her decide whether to push things further or to fix it. Put it in the backdrop of the war between France and England, with the secret stakes being losses at war (lord X withdrew his support, etc.)
For a DM aid, I'd make a support index like this one, substituting the names of the various lords for the country names here, and logging their support for her and for each side of the war. That way you can relate her progress to her as she works so she won't get frustrated.

She sounds like a very strange person. Why exactly are you with her if you think she's so... unstable? It doesn't sound like a solid foundation for a relationship

See, that's another problem: she doesn't care about what happens to other characters or entire nations as long as she survives. At the mere hint of her life being ni peril, she'll just withdraw from the whole ordeal with her love interest and run away for eternity, even if it implies kidnapping said love insterest or cutting off his legs to take him along with her. She's done it before.

I appreciate the input, user, but I've taken my decision and we're getting married later this year. I just wanted some ideas for a campaign where she'd get some romance plot and a bit of drama but without much risk on it.

Tsundere = likes someone but is afraid to admit it and so overcompensates by being hostile (or just somebody who starts off cold/hostile and them warms up, or who flips back and forth between those states)
Yandere = crazy obsessed with someone, sometimes violently and insanely so
