Quick question. If you where a being powerful enough being to kill eldritch horrors for good. Would you too be a eldritch horror too, nothing short of a living and thinking entropy?

If all you were a being that can only kill eldritch horrors for good, nothing else, then you would be. Otherwise it would be just a facet of who you are.

You would most likely be considered a powerful god.

got more like this where deep ones or deep one hybrids are portrayed as more human-ish? the ones that make them look like scavenging animals or roaring beasts on two legs get lose their punch after a while.

Not even a little, no. Derleth kind of did that with Lovecraftian entities though.

And eldritch beings don't look pretty, but could arguably be beautiful, because they're generally so inhuman as to be terrifying, think descriptions of Angels from the Bible.

Pretty is the opposite of eldritch, it's indicative of values shared between you and them. Peak-eldritch defines gross by being the kind of thing life as you knew it evolved revulsion in order to avoid.

What I mean is something can be aesthetically pleasing and still be horrifying. For instance beetles, they have those pretty beautiful shells but they aee creepy as hell with those chittery faces and legs.
