Okay, I get it, it could seem like your putting to much at risk on the hands of strangers, but you don't even need to use and escrow with Payfair (PFR). Its just an option. If you want it can just be the seller and the buyer making a transaction after both parties agree that their requirements were met.
Now let's say you do want to use the escrow for extra security, From my understanding you transaction will be handled by 3 different people. They are all anonymous to each other and to the people making the transaction. The transaction will be approved after three consecutive approvals from the escrow participants.
And what keeps the escrow participants from misbehaving? Their own tokens will be at risk for bad behavior, there will also be a rating system, and people who use the service will be incentivized to rate by the giving them lower fees for participating.

They are Russian and i believe the ICO raised $120,000. which in the crypto world is pennies, but it just means we have the opportunity to buy in at super cheap prices.
The team is very active and listens to the community on telegram.

How is this coin different from any other coin trying to do the exact same thing with trading crypto for fiat?

you will make a percentage of each transaction buy holding trust and escrow nodes. i think they said they will pay out monthly.
if you name a specific coin i could go into more detail
payfair allows for the use of an escrow. basically a third party making sure both parties complete their part of their agreement.
not only could you sell crypto, but also use it as a way to get paid for contract work.
it would also be possible to trade between crypto currencies.
So the eth and btc pairings wont be so restrictive.
you could potentially sell DOGE for LINK or any combination of coins.
so to answer your question Payfair does what those coins do and more. also they pay you for holding nodes.
