I like Nighthaunt a lot aesthetically but I also really like Flesh Eaters. And their fluff meshes so well.

This. You can still go pure nighthaunt but Death is now better as a whole. The options in that 3 new legions are far better than run a pure list of any faction and it will remain like this until GW give us battletomes

Not having to be drawn in a specific style may help too. Plus there are multiple things that go into the sculpt of a model.

GW's sculpts have been sorta subpar recently. Some of them have been good, but they've been really fucking up when it comes to faces.

Plus my models port between the two games for the most part so it's not like I'm paying extra.

You should get the new Death Battletome, and maybe get a wight king to start with. The SC box is a good place to start

They should have just put fantasy to sleep and make a totally new setting. New characters, new factions (they in part do that), new world.

You can see glimps of what could have been with the Kharadrons. Their art looks very nice, espacially those pieces that don't show them fighting.
