Quick summary: FunFair is a software developer making gambling games. The games run inside smart contracts, which use FUN tokens, to make gambling provably-fair on the Ethereum blockchain, along with state channels which allow the use of said smart contracts off-chain for scalability and reduced cost for a gambler to play. FunFair is licensing their games out to casino operators to utilize for free.
The problem FunFair solves is the issue of trust that plagues online gambling. Also, hosting a FunFair casino has much lower overhead costs than a typical online casino due to the decentralized nature of the Ethereum network.

There's always a possibility given enough people flood the network with transactions, but since FunFair's games utilize provably-fair off-chain state channels, only two on-chain transactions are required for a gaming session: one transaction at the start of a session, and one at the end of a session. After you start a session of gambling, you play as much as you want and it will not bog down the Ethereum network.
