That's from Once Upon A Time in China, one of the best martial-arts movies ever made. Jet Li in his prime. (The second movie has a young Donnie Yen.)
For something more recent, you could try the Hero soundtrack. That movie's about an assassination attempt on Qin Shihuang's life.
The last one is from the Storm Riders. This is a fantasy wuxia story, but the opening song (And gloriously bad 90s CGI) is a personal favorite.
Electric shamisen is amazing. Not quite Chinese I guess, but Asian as all get out.

Honestly, Kung Fu Hustle's soundtrack plays like a greatest hits album for high energy (if short) Chinese-sounding melodies.
Imperial China and guzheng music is great and all, and very thematic, but when I think "Chinese themed campaign music" my mind goes to old martial arts movies.

Say what you will about AC: Chronicles: China but I'll be damned if the soundtrack isn't anything but super well done. Assassin's Creed games always tend to have really good soundtracks and this sure ain't an exception
