Because according to preview summaries, in the last two episodes after fully mastering UI and maybe surpassing even Beerus, Goku still eventually loses to Jiren. And it's heavily implied that FRIEZA of all people brings down a very exhausted Jiren
Basically Ultra Instinct is a meme, and you should save up for whatever Jiren perk lets you be stronger than time.
