I want my fantasies to be as close to reality as possible magics aside. Saying "it's just magic deal with it lol" is just lazy.

Verisimilitude is more important. If your character is stronger than they should be due to unspecifiedomancy that doesn't exist in setting and they have no demonstrable ability to use, that is worse than just saying that the biological differences don't exist.

You can do whatever, but if Curse of Strahd does not put women on uneven footing with men via -4 strength or something else, it is bad writing. The race you play as isn't human if they are on equal footing.

It's called internal consistency, brainlet. It means that except for a few differences that are clearly outlined, this world operates like the real one. If women are just as strong as men and the explanation is explicitly magic, then fine. But if it's not explained, then it's a break from reality in a way that hasn't been clearly outlined.
This would be like if all people in the setting had polkadotted skin. "LOL ITS FICTION BRO" and "THERES FIREBALLS AND WIZARDS AND THIS IS WHAT YOU HAVE A PROBLEM WITH? XDXDXD" would not be satisfactory answers to that.

You have to accept a suspension of disbelief to accept magic in the first place, no matter how mysterious it is or how structured it is in the setting. Moreover, we have to accept the sheer existence of otherwise mundane creatures like giants or orcs in fiction, and things like an unenchanted male human warrior being able to survive a volley of well-placed arrows in say, d20 family.
Honestly, I also prefer keeping women as a weaker gender in settings, I think the difference in sexes lends good space for the writing, but your logic is fucked from the ground level. The only justification needed in a setting to represent a woman as being as competent as a man in martial ability is that she is. When it comes down to it, all but the absolute most grounded fantasy doesn't represent humans as identical to what they are on Earth, it represents their counterpart on whatever fantasy land or alternate history the story takes place in.

Have you ever actually shot a bow? It takes years to get good with a modern compound bow with sights and a release, now double that time for an even more inaccurate English longbow. Anyone using an old style bow will be out- classed easily by someone of a similar skill level using modern equipment. Not to mention, the draw weight has little to no reason to go above 60 pounds, and even 40 is reasonable to kill most game. The ancient longbow, with draw weight around 90 pounds, is so unnecessary. This attitude you and all those dicks that don't understand basic science is the same as people who think horses are better than cars because they were around longer.

A realistic setting with magic would be absolutely nothing like a "realistic real world" setting. Whining about women being competent martials on grounds of "muh internal consistency/realism" the second you introduce non-human races that are stronger than humans. And a reminder that if human women can't be fighters, neither can male elves, halflings, dwarves, gnomes, or pretty much any race besides half-elves, half orcs, or similar.
