So i am thinking that the idoneth are probably going to be like a medium horde sized army with the turtles and eel riders as support units more than anything. The blind elves will probably be your swarm of units that need to have a unit nearby to fight effectively

I saw Seraphon and liked their lore of being Celestial Daemons along with the Slaan being active. The battles in their tome are neat too, I liked the one bit about the Herald of Slaanesh who thought she was just going to get 'killed' amd sent back to Chaos but the slaan just obliterated her instead.

I dont think they are. Especially since they all die quite often and are reforged. So in a single battle they arent as dominant as a space marine but in the overall campaign they are quite dominant because they never truly die.
That said they are all recruited from the greatest fighters of humankind and given a blank check on weapons armor and training.

Stormcast Eternals are mortals who fought with such bravery and virtue when everything went to shit and Sigmar was forced to retreat, that he plucked them up out of the battlefields with a shot of lightning and reforged them, encasing their spirits into the Stormcast armour (I guess?)
they're better than most mortals, but they're not invulnerable, and when they die their spirits are shot back up to Sigmar on the same lightning bolt to be reforged anew.

Depends on the author really. The Gates of Azyr has them as Space Marine tier to the regular humans and Blood Reavers, but more equal footing with the Blood Warriors. The book after has them dying in droves

Spiders have only two plastic kits but they seem to be amazing with so many options - kitbash a spare flinger as a lobber; model a single spider rider legs and run it as a hyper budget Grot Big Boss on Gigantic Spider; take a spare grot from the arachnarok kit and run it as an extra flavoured shaman to work with the lobber. GW could give them 2-3 more warscrolls just for more list-building variety imo

I'm Destruction through and through, but I'm salty that every army is becoming Destruction; every army is getting a big monster centerpiece, plus other monsters, except unlike Destruction they have 8+ bravery and loads of other stuff we don't. Hordes used to be our thing too, but everyone gets them too now.
