Spanish Omelette/Tortilla

Anyone ever tried making this? Had a few homemade ones by Spanish people in Spain and they were delicious, restaurant ones are crap though so I thought I'd give it a go myself. They warned me that it was easy to fuck it up so i was worried but I thought it came out pretty good for a first attempt. Tasted really good.

I used Desiree potatoes, an onion and 6 eggs. Feel free to tell me why it looks shit or whatever

Tortilla needs to be well cooked so it holds together in your pocket on the way to the bullfight.

Would eat the fuck out of that tortilla with a crisp glass of spanish white wine.

Just Bento has a recipe that I've always used. I think her recipe in the cookbook even has peppers in it. It's never failed me and its tasty.

hmm i wouldn't put peppers in it though, i just wanted it to taste like the home made ones i'd eaten in spain and this worked a treat. i'll look into the recipe though for comparison!

Best way to do it is with honey ham, red potatoes, sweet plantains, and a yellow onion. This is the Cuban style so make sure to season with adobo and oregano. Made that for sunday brunch in my kitchen and it has sold out every single Sunday. Also great on Cuban bread with garlic aioli, arugula dressed with roasted Lemon vinaigrette, and melted swiss.

1/4 lbs hamon
1 sweet plantains
1/2 yellow onion
2 small red potatoes
Saute and season
15 eggs with a touch of cream for some puff
I recommend using a cast iron skillet for all this because you will have to finish it in the oven
Make sure to put it in the oven as soon as you add the eggs to avoid an burnt bottom

i doubt i can get plantains here to be quite honest

I've made better. I usually add equal weight of eggs and potatoes but this time I added more potatoes because everyone on internet says add more potatoes. It needed less potatoes.
