I just use random chiles. A bit of these, a bit of those. I don't really feel like writing a recipe for it and following it.

I was taught (correctly, IMO) that the dried chiles should be toasted, and not burned. Burned = no flavor, just bitter.
Toasting them in a pan is a bit of a chore; I find it easier to control it with a torch.

I know that last pic looks like a lot of burned chile, but it's mostly because of flash.
Mostly.... The really burned parts and seeds go in the trash.

Anyhow, the chiles need to be reconstituded reconstitooted reconstituted, in water

I'm going to throw these things on the grill because depth of flavor.
