Hey Veeky Forums, long time no see.
I finally got some vacation time this week, so I decided to post some OC for you! I had some random stuff I needed to use up so I decided to make a white lasagna, but with a special twist just for all you co/ck/s!
Those of you who remember me might remember that I sometimes have a sick sense of humor with my food, so get ready. You'll either love it, or will tell me to KYS.

First, we're going to bake some sweet potatoes (yep, needed to use these up)

While those bake, time to saute some pancetta

Almost there, getting brown and crispy.

Removed the pancetta from the pan. It didn't render out much fat, so I'll need to add a bit of butter.

Then it's time to caramelize 2 sliced onions.
I forgot to take a pic of them before I added them to the next step, so BOO, this is the only pic of the onions I have.

When the sweet potatoes are soft and cool enough to handle, remove the skins and place in a bowl.

Coarsely mash the sweet potatoes, and then stir in the pancetta, the caramelized onions, salt, pepper, a little thyme and rosemary, and parmesan cheese.

Okay, on to filling #2!

Here is some blanched, chopped spinach.

Then we're going to add some chopped confit garlic (nice mellow flavor).

Add some parmesan cheese

Add some ricotta cheese, plus s&p

And don't forget a little nutmeg!

Time to make the bechamel sauce. I didn't bother taking pics of every step, but I'm sure you guys know how bechamel is made anyway.

Grate some mozzarella. Or you could slice it thinly. Whatever. I was in a hurry, so I used my trusty ancient "Handy Slice and Shred". They don't even make these anymore, but it still works great, lol.

Okay, now we start layering by putting some sauce in the bottom and then covering with pasta sheets.

Lay down your sweet potato filling, spread evenly.

Cover with some cheese and more sauce.

Lay down more pasta sheets.

And now it's time for the truly heinous part of my evil lasagna plan, the surprise third filling!

THAT'S RIGHT, I DID IT. I'M A SICK AND TWISTED INDIVIDUAL.

Just lay those evil little puppies in a single layer all over that precious lasagna.

Then cover your treachery with more cheese and sauce.

Then lay down more pasta sheets (which I forgot to take a pic of), and top with your spinach filling, spreading evenly.

Top the spinach layer with more pasta sheets, then top those with mozzarella, bechamel, and parmesan. I also sprinkled some minced parsley and crushed red pepper flakes on top.
Bake at 350 for about 1 hour and 10 minutes.

And here it is, browned and bubbly from the oven.

i need to see a cross-section of this... thing.

And, finally, a money shot.

You know, it tastes pretty good, actually. I should have let it sit a little longer before I cut it, so I could have gotten a cleaner cut, but meh...

You can replace the ridiculous fast food layer of the lasagna with a nice Italian sausage filling, which would be very tasty.

You must have completely missed this years challenge, because this is nothing in comparison.

I actually did miss this year's challenge, because I was busy with work.

Here's a pic I just cut from the leftover lasagna. Since it's cold, it shows a better representation of the layers.
