It's illegal to not add synthetic chemicals to grain manufactured in the US.
They severely fuck the cooking process, make the water cloudy and foamy and make the end product taste like chemicals.

That's really the only option besides hunting down unenriched rice/sghetti, which cook perfectly and leave the water completely clear.
The fda will arrest you if you process grain here and refuse to add guv'mint chemicals to it, but you can sometimes find imported grain without this law imposed on it.
I find it fucking ridiculous because one of the mandatory chemicals is biocumulative and causes liver failure, but is added to every single grain product we eat.

And? Lots of foods are fortified with vitamins and/or minerals. Its to keep people from becoming deficient. You only run the risk of vitamin toxicity if you are taking supplements; that or eating polar bear liver. The human body is extremely good at keeping itself balanced and filtering out unnecessary excess.

No, they are removed because the vitamins occur in the rice bran, not in the kernels themselves. And the bran goes rancid very fast due to its oil content. Thus the bran is removed, and the vitamins it contains go with it. Just like everywhere else in the world. The law has nothing to do with it.

This. If I have to pick between long and shortgrain I always go for shortgrain.

why though? I always find the "glueyness" and mealyness of short grain rice to be off-putting. I much prefer the longer, firmer grains.

thai jasmine rice is some of the best you can get for eating just rice. It doesn't make a good side to another dish though. For that, basmati's your go to.

Try washing your rice under water until it's no longer cloudy and use a little less water every time until it's dry enough for your liking.
