mustard is the secret ingredient.
if you want a balsamic vinagrette kinda thing mix a squirt of 'deli-style' or 'spicy' mustard with more red wine vinegar and less oilive oil some salt and pepper to taste and a bit of Parmesan cheese
whip it up so that the oil combines and pour it all over. It'll take a couple tries to get it right but you'll get it eventually.
Also just try way more salt, that's usually the flavor that's missing from home cooked foods
