Keep in mind with curry though that it's about concentrating flavors.

First lots of onions until they are dark and sweet, then garlic and ginger (and other aromatics) til fragrant. Add in packaged spice and toss in hot oil for a minute to aromatize.

Figure out what profile you want -- sweet, acidic, grassy -- then choose your main "medium" (e.g., coconut, tomatoes, spinach). Then decide on your protein and finally your garnish (more aromatics to accompany the main flavors).

Same principles as any stew in the world.
