tbqh not a lot of vegetarian dishes in afghan cuisine, but I'm sure google has some more information.
Also, I can't cook them for shit, I usually get to eat them when I go visit my parents.

Falafel, hummus, and baba ganoush are your standard vegetarian Middle Eastern foods. My favorite thing is to eat falafel in pita with tahini sauce or toum with french fries. This is also a good rice dish:

If you're willing to eat meat, you can make a good facsimile of chicken shawerma at home, there are some recipes online.

I think it looks a lot like an Italian dish. I've only had Afghan food once or twice, but it was pretty based.

If you're ever in Israel, go to a town called Rosh Pina and order falafel at a place called Falafel Usul. Blast it with Tahini.
It will be the single tastiest thing you ever ate.
