Ratatouille

Vegetable soup:

Get a big pot.

Add olive oil to pan. Fry onions and garlic.
Add about 1/2 kg of mixed vegetables such as carrot, potato, sweet potato, beetroot.
Add one stock cube.
Add about 300mL-400mL water.
Allow to cook for about 30-40 minutes. Taste.
Check if soft. Mash if desired. Whizz in blender or food processor if desired. Serve with a drizzle of fine quality oil, salt and a little pepper (optional).

Vegetable chili:

>In a pot (medium-med high), add 1-2 tbsp oil of your choice
>Add chopped onions and salt
>Dice red potatoes, carrots, mushrooms and put aside.
>Un-can corn, pinto beans and tomatoes
>Add the vegetables you diced into pot and stir around for 5-8 mins.
>Salt, pepper, ground cumin and paprika to taste
>Add canned stuff (Drain the corn water and bean water, but leave tomato juice)
>When the pot comes to a boil, lower heat to low-medium and cover pot with lid for 20 mins
