There are far higher safety standards in place in the UK than there exists in the USA, therefore this additional cost of ensuring that the food is of a high standard is absorbed by the consumer.

It's worth it if it means that you can visit pretty much any food retailer, knowing that every single member of staff must have passed certifications in food safety and such like, and that the premises are regularly inspected by health officials, and that thay comply with and keep records of relevant health and safety legislative requirements.
