Rice is cooking. someone is yelling etouffee in the living room. not sure if gumbo or etouffee. my roux will work for both but maybe too dark for etouffee. Either way we'll have rice.

the fat is in the bag also. but yeah sucking the broth and bits is good stuff. I opened the bag already and these arent seasoned at all so i'm hoping they will absorb some flavor from the base.

I'd recommend lighter cheeses for crawfish mac, like a mild cheddar mixed with emmental. Maybe a bit of cream cheese if you want it to thicken up.
