Milton Hershey couldn't exactly replicate how Nestle made milk chocolate so he developed a process that incorporated a unique flavoring that he decided was good enough and Americans developed a taste for it.

The taste was accepted though, so many American chocolates will continue to have it. It does mean that it lasts for a long time.

My favorite grocery store chocolate brand (as opposed to local chocolates from chocolatiers, which I prefer) is Chocolove, and no butyric acid in site. Most decent, higher-end brands do not taste like vomit.

American chocolate is higher quality than EU chocolate, which often cannot be sold as chocolate at all in america. EU chocolate is referred to as "chocolatey coating" in america.

You guys are all mossing the point. American "chocolate" has very little to no actual cocoa butter in it. The definition of "chocolate" under american laws allow for artificial flavorings and sugar, or hfcs to take the place of cocoa butter, which makes it not chocolate.

Assuming anyone in this country actually made anything with real cocoa, cocoa fats and cocoa butter, it would probably be pretty good. But they wont, but costs. In the meanwhile, those same costs are driving the european markets to do the same thing, so bitch while you can, soon it'll all be artifical flavor and hfcs no matter where you go.

I buy a $2 plastic bottle of the blended no name stuff from the supermarket for cooking purposes, extra virgin is a meme for cooking with.

If it contains substitute oils or fats, artificial sweeteners, or milk substitutes it cannot legally be called chocolate in the USA. EU regulations allow for up to 5% of total content to substitute fats.

Also, after some reading, just about all of those brands are imported into the US and liable to be fake. American olive oils may be on the up and up, but not everything on the shelf is.

Cocoa is not sweet. It is in fact very bitter. The higher the percentage of liquor, the more bitter the chocolate.
