Maybe these are rare enough not to occur to too many:

1) Near East or another brand of falafel mix is a fun alternative to crumbs that has extra protein, lots of herbs and perfect amount of seasoning. And, you do pick up that hint of hummus-y chickpea flavor. Do the flour and egg wash step first, and then back into the egg and falafel again for double crunch.
2) mustard or dijonmaise coating and then in crushed pretzels. Add onion powder to complete the mustard onion snyders kind of mood, or just plan on a dijon dipping sauce (also good with curry)
3) croutons of your choice. Whirl them up in food processor, or crush in a ziploc. This isn't the best thing ever as far as preservatives, but it can add a ranch crunch or another flavor you don't have easily on hand otherwise. Add more dill for zip. You can also make the crunch size more coarse.

Pork Rinds.

I'm serious.
Buy a bag of pork rinds.
Crush them into crumbs.
Get some thin cut chicken fillets.
Flour, spices, egg wash, apply pork crumbs.
Bake until cooked.

I always like that coating made with parmesan and some kind of crushed nut, like pine nuts or pecans or almonds.

making tendies with anything other than seasoned flour should be grounds for being sent to the gas chamber. if mommy brought me tendies that weren't deep fried with seasoned flour breading I would throw them right back and stomp my feet through the floor.
