OP here.
Checked some other sources and seems chocolate desserts are always there for the dark beers and pork for the other ones.
Although the chocolate is not really top of my list, I'd like to explore the cheese and charcuterie options.
For instance Saint Agur worked well for a farmhouse ale I had, some serrano ham or lomo iberico could work with the smoky beer, some almond sauteed mushrooms for the doppelbock.
Makes sense?
How about the dark belgian and the sour red? Guess I'll finish on the impy, but am really not convinced with the chocolate cake...
