Chewy cookies are more easily achieved by substituting cake flour (higher gluten content), 1 whole egg and 1 egg yolk and 2 tbsp milk (egg white makes it crispy), subbing in all brown sugar (molasses is chewy when cooked), refrigerating the dough (cold dough cooks more slowly), melting the butter before adding it (mixes more evenly), etc.

margarine IS less fatty with a decently lower calorie count, so it won't make you as fat as easily.

That's all I've got. My mother uses and prefers it so I grew up eating margarine or olive oil spread. Switched to butter when I started living on my own. It's infinitely better.
