Strange I'm making homemade pasta today too and I almost posted pics.

75g "00" flour
25g semolina
1 egg
Splash of olive oil.

Knead and rest for 30 min.

I'm doing tagliatelle with chicken caciatorre (I know eurofags, not quite kosher, but I like it).

Add garlic and dried chili peppers, watch as they infuse the oil with The Taste.

Add onion and eggplant

PAN HOT

Where do you get your 00 at? Im having a bitch of a time finding any.

Reduce heat to low and cover. Cook for ten minutes.

Add tomato, tomato paste, chopped olives, chopped capers.

Increase heat to medium-low and cover. Also start heating a pot of salted water.

Are you on caloric restriction? I'm only 132 lbs but a portion of pasta this small would only make me more hungrier.

Water is boiling, in goes the pasta.

It doesn't look like much in that picture, but it actually came out to be a lot.

Adding some pepper and some dried herbs to the sauce.

Add several big spoonfuls of pasta water to the sauce and add in the pasta to finish cooking in the sauce.

Get everything evenly coated

Add some freshly grated parmigiano reggiano

Serve with some wine from a fancy looking bottle and a slice of pan de jamon (I know we're nowhere near Christmas, but I had a craving so I made some yesterday).

I get it at an Italian deli/market. This is a real backwater on the Mississippi so they should have it where you are. If they don't, try the internet.

It's expensive, but I only use it for pasta and pizza dough.

Starch from the noodles thicken the sauce.

It's because of the salt too. This way you can add water without watering it down. Also one more flavor.

Olives & capers added somewhat bitter-sour taste, I like it. The eggplant made it taste more vegetable-ish than normal spaghetti sauce. Bit spicy, but not to much. Im glad I added little herbs, or they would kill the taste. Adding mushrooms was a good idea too.

Sauce still a bit to thin (eggplant I added was rather big), I'm vaporing out some water, maybe I'll add a little potato flour if it's still too thin.

I'll wait till wife comes back than we'll eat.
