The broth is pretty high in sodium, and the beef tallow and lao gan ma are both basically pure fat, but otherwise it's pretty healthy. Could use more vegetables.

Doesn't the laoganma overpower the rest of the soup a little too much ?

I'm not a little bitch who can't handle spice, mind you. But it seems to me that a miso-based soup needs to be quite umami and laoganma is pretty much going on full Columbine in there.

Yeah, it's a matter of preference, and a little does go a long way; the egg and veggies weren't otherwise seasoned, mind you. I also just watched a show about how people in Nagano add Shichimi Togarashi to their miso soup, so why not at least try things I say. But I see where you're coming from. Anything lighter than red miso and it would have definitely overpowered it.
