Want to make this dish but living in bum fuck rural America, I don't have access to any of the specialized ingredients (e.g. Shizuan peppercorns), does anyone have a suitable cheat recipe?
You can't really replace sichuan peppercorn for this.
You should be able to mail order all the shelf-stable ingredients though:

So all that's really left is tofu, ground pork, scallions, sesame oil, garlic, ginger and chicken stock

I prefer thinly sliced beef with my Sichuan water boiled dish (literal Chinese translation). Oddly enough chicken doesn't absorb the flavor as well as fish or beef imo.
Many dim sum restaurants especially in America mostly serves Cantonese style food which makes it more difficult to find authentic sichuan food.
I never thought to put bok choy in these style dishes, I'll have to try it next time

I had that for the first time on Friday. It was great. Spicy, soft tofu, chewy pork. It was more rich than I thought It would be. I regret not getting white rice instead of fried.
