Simple Token (OST) seems decent. Token is used for creating and managing tokens on ethereum sidechains. Seems useful to me, and they've already found companies willing to use it for their tokens. Most are just small startups, but Unsplash is a popular photography site at least.

Most data can be aggregated from multiple sources. It’s easier to attack a centralized oracle aggregating the data than it is manipulate every single source of said data. For example, sports scores. Would it be easier to attack Oraclize or attack ESPN, bleacher report, the score, fox sports, and all other sources reporting said score?

Your argument is that in highly specialised and unique cases, it would be risky to blindly consume data sources. Given the parties entering the contract agree that the data source is sufficiently secure, this won't be a concern. If the parties are not confident in the security of the data source they will not enter the contractual agreement.

It is still preferable to use smart contracts instead of the traditional legal frameworks where possible to cut costs. Traditional contracts are more prone to abuse. e.g. I deliver the goods but you decide not to pay me $1m because you don't want to. You threaten to drag me thru legal proceedings which will cost me $500k, effectively extorting me out of 50%.

Only if you enter the contract in the first place. For a highly specialized use case, you would likely develop a bespoke contract, in which case you would have scope to vet the data source.
In other general cares e.g. insurance contract needs to check if the magnetic lock was active for the warehouse, or, shipping contract which checks if the containers arrived, yes you need to trust the lock makers or the port or whatever. If these trusted third parties were found to be bad actors or insecure, they will likely be punished via legal action or outcompeted. The point is you know that the data, once it leaves the source, has not been tampered with. This is the value that it offers.

The point is, if you know that the data is legit, you don't need a fucking third party "network" supposed to verify data validity.
The whole point of smart contracts is immutability, i.e. when interacting with unknown, unreliable and potentially hostile counterparties. If you can dispute things, smart contracts become unnecessary. An automatic trigger is not really different from a Joe pressing the "done" button.

The validity of the data itself is not the issue. It ensures the tamper proof ness of the inputs and outputs. It never claimed to solve the trust issue around data providers. It solves the oracle problem (lel).
