the person using Link as the oracle for their smart contract can pick and choose what specific nodes they want. If they want to pick 5 different weather data nodes with 5 different sources, they'll be able to do that.

I guess node selection needs to be clarified. When you make a contract and setup your node configuration, you can customize how many nodes you want, what data sources they retrieve from, how much minimum link they should have staked, minimum reputation level ect. But you don't choose the specific node you want doing the job. The network will select nodes that fit the criteria. The mechanics haven't been completely settled on, or at least released to the public, but you definitely will not manually select a specific node

you can actually choose nodes as they have identifiers so if you wanted to you could have your own private network with in the network for degrees of decentralization. It all depends on what you want, I'm sure mostly though it'll be randomly selecting nodes that fit the reputation minimum though.
