No reason at all I can't just get beef stock tomorrow before I cook it. I have no idea why that didn't occur to me

Add some form of fresh pepper (green, jalepeno, poblano, serrano) depending on how spicy you want it with the garlic and onion saute.

Use beef broth, dark beer or combo in place of chicken broth.

I usually add green, red and yellow peppers in with the tomatoes and beans.

I use chicken stock in my chili too. I'd recommend trying it. I like the results better than beef stock.

Honestly, I prefer no bean chili because beans give the chili a weird dried out starch taste.
