It's a quite mysterious substance. Having almost no calories in it...but I think most of it is made of dehydrated corn syrup.

most dry high calorie foodstuff is. we use it as sustenance mostly because it is dense in energy, thus flammable. even explosive (think flour or sugar explosions, very powerful.)

I thought it was just because of legal definitions. If they define one serving small enough to account for less than 5 calories or something, then they are allowed to claim it has no calories.

This. "one serving" of creamer is small enough that it's calorie content can legally be called zero. It's not as if anyone actually eats creamer in the volume of actual food.
