My favourite ever :
Make shortbread batter (50g melted butter, 1 egg, shit ton of sugar, flour)
Butter a square oven pan and flatten all that batter on the bottom
15 minutes at 215°C
Meanwhile, blend the juice of 2 lemons and some zest with 2 egg yolks, sugar, heavy cream and flour (No quantities cause I'm not your dad) till you got a slightly thick mixture, then incorporate the battered whites
Pour on batter and back in the oven for 10 more minutes at 215
Sprinkle withg sugar, put it back in the oven for 5 minutes
Let cool completely

lemon water

make a glass of ice water and squeeze lemon. don't let the seeds get in there

Lemon juice, lemon zest, 1tbsp olive oil, shrimps in a pan with 1 garlic clove and a pinch of chili. Cook no more than1 minute, flambé with some good whiskey or brandy. Salt to taste,the shrimps must be soft.

Debone an avocado, take the pulp, mix with some lemon juice, black pepper, pinch of chili, lemon zest or better, freshly grated ginger and mix very well.

Toast some homemade bread.
Put the avocado mixture, put the shrimps. Season to taste.
Optional some grated ginger or lemon zest.

Lime tastes better in a gin and tonic though...

Cup of hot water
Juice of half a lemon
Tbsp honey
Tsp ground cinnamon
1/2 tumeric

Favorite Mediterranean marinade:

1 cup of plain Greek Yogurt
Zest of half a lemon
2 tbsp lemon juice
2 tbsp olive oil
1/8 tsp ground cinnamon
2 tsp paprika
1 tsp red pepper flakes
1 1/2 tsp garlic powder
1 1/2 tsp kosher salt
3/4 tsp cracked black pepper

Put on chicken breasts the night before (marinate atleast 8 hours) grill or broil.
