A really easy way I like to do is to salt and pepper the fillets, then grill them. serve with lemon squeezed over them and brush on some melted butter, both to taste. There are other ways, but just that is damn tasty.

I typically go cage match, and use leg tackles to subdue the trout.

Sous vide, medium rare.

This user has the right idea OP. Keep it as simple as possible. Salt, pepper, lemon, and butter are usually all I ever put on my trout.

If you want it the best possible, imo take the things fishing with you along with some aluminum foil. Gut it, but keep the head on, and wrap it in aluminum foil with the ingredients in the with it. Put it on some hot coals and let it cook until the eyes just go white.

Rainbow trout is my favorite to do this with.

Make an sliced onion bed in a piece of aluminum foil
Put the whole trout on top
Put tomato slices on top of the trout
S&P
Wrap foil around everything
Put directly in hot coals for like 15 minutes
Enjoy

Easy as fuck, can be done in a campfire, or on a BBQ and not take grill space

put in a deep pan on foil
season, cover in cream
cover, bake for an hour at 180-200C

Huck Finn style. Fry bacon pieces and a crushed garlic in a pan with butter, add a whole trout 4 mins per side, finish off with a splash of shallot vinegar and some parsley.

I generally agree, but add some oregano and no butter.

Also grilling the whole fish keeps it juicier.
