No. Brisket and beef ribs are tough and have to cook low and slow to break down the collagen so it will be tender. The dark "bark" on the outside is the combination of spices mixed with smoke over the long slow cooking and add an importat dimension of flavor.

I heard that the black, charred coating has a great deal of carcinogens.

Smoked barbecue is fucking delicious. That bark is formed by caramelisation of the spice rubs and the slowly dissolving fats and proteins from the meat. It's crispy and flavoursome and encases meat that is like meat flavoured softened butter that just dissolves in your mouth.

I fucking love smoked barbecue. I wish I had a smoker.
