IMHO, grilled cheese needs to be either the basic classic, or it needs to go all-out and over the top.

Basic: White bread, kraft single, cooked in butter.

Fancy: German rye bread, slow-cooked short rib meat, caramelized shallots, gastrique, St. Andre or another soft, funky French cheese.

Another good fancy one: Sourdough, goat cheese, bacon, caramelized slices of apple or pear

I'd like to stick to a strictly classic bread-cheese-butter setup, but there is no way that white + kraft singles is optimal.

Sourdough and good rye are definitely top tier.

-Spread
-Cheese

Anything else is a 'melt'

I see you missed the part where I said "all out and over the top". Clearly it's not a standard "grilled cheese anymore. Call it a melt if it triggers you 'spergers less, doesn't bother me.

Wheat bread, Colby jack cheese, chopped tomatoes and/or grilled spinach and pesto.

Sometimes I add shredded chicken, but that's only even I need the protein.

Colby jack is good. I also like a sharp white.
Get some sourdough. Honestly most bread is fine as long as it's not too soft.
Slather in butter and throw it in a pan. (I've heard mayo is superior but I haven't tried it yet.) Add grill press. If you don't have a press, use a spatula to press it flat onto the pan.
Cook slowly in order to melt the cheese before burning the bread.
Cut diagonally. If you cut your sandwiches horizontally you're subhuman.

Kraft singles is the only way to make a grilled cheese, any other cheese and your trying too hard.

On the stove, not in it. Usually I make mine on the burner but didn't feel like washing my only pan so I tried it in the oven, I don't recommend it.

- Rye bread
- Thick slices of cheddar

Toast the bread first and grill the sandwich on butter. Dip it in ketchup.

Very thin layer of dijon mustard on one slice of bread
Add rosemary to butter when cooking or use a bread with rosemary baked in
Colby jack cheese for melty goodness

If you want to get extra fancy, put some brie and aged cheddar in a food processor until you get a spread. Aged cheddar on its own doesn't melt that evenly because it is so dry.

I make a regular grilled cheese with white bread and 1 or 2 slices of cheese but when I put butter on the sides I also add some onion powder on top of the butter

You wanna out a slice of ham in the middle, in between two layers ofcheese. It makes the cheese softer. Also, take your time toasting it so all the cheese is nice and melted.

I put shredded parmesan on the outside of the bread and sometimes use mozzarella and dip it in red sauce

The best most glass like crust I've ever gotten was from using vegetable shortening. (I know its shit for you) but damn was that a beautiful crust.

My favorite grilled cheese to make is using sourdough bread and spreading mayonnaise on the outside of the bread and then put sliced havarti cheese and honey on the inside. It's god tier

Crisco is vegetable shortening. All you have to do is look and see if contains hydrogenated vegetable oil.

I think one thing that is important is letting your cheese come up to room temp beforehand. The faster the cheese melts the crispier and less fat soaked bread you will have.

I fucking hate autists to fucking much holy fuck. I am not even a fan of that movie or actor but the whole scene is meant to provide depth into the type of character he is. He cares so much about his son that even something as basic as a grilled cheese sandwich is given tremendous effort on his part.
