Classically a bechamel is made using only white pepper to prevent discoloration. However since you're adding ground nutmeg to it, there isn't any real merit behind it.

In the oven for about 30 minutes.
Sorry I don't measure much of anything. Pound of cheese in he sauce and 1/2 pound in he layers. It was quite tasty
