My Greek friends basically go vegan for lent. That's the fast as I understand it.

I'm Catholic but on fast days we go with fruit, nuts, and veggies

Not even that guy, but half my mother's family are Byzantines and half my dad's are Maronites. Both observe fasts wherein wine and oil are forbidden. I wasn't raised religious so I never had to do those fasts. I think wine/oil is forbidden through all four of the major fasts (Nativity/Martin's Lent, Greater Lent, Apostles' Fast and the Dormition), but only Mondays, Wednesdays and Fridays. Additionally, no animal products are to be consumed during fasts except for fish on weekends.

In addition, Byzantine Catholics have a few other fast days outside of the four major fasting periods, like the vigil for St. John the Baptist's beheading, where in addition to the other rules, you're not allowed to eat anything round, especially not cabbages or beans, or anything that requires a knife to prepare or eat or that is served on a flat plate. Ergo, it's soup day. Carrot and leek soup. Whole leeks and whole carrots are cooked in water then eaten once they're mushy as fuck. It's horrible.

Orthodox, Maronites and Byzantines all follow the same fasts and have more-or-less the same rules for them. Maronites and Byzantines, where xerophagy is seldom done except by clergy and try-hards, are considered less strict than Orthodox, where xerophagy is done by nearly all of the various branches.

Now, for an anecdotal bit of something: growing up, Coptic friends of mine sneaked out of the house during many of their numerous fasts (like, two-thirds of the year is fasting and half of the fasting days involve xerophagy) just to eat fucking bean burritos at Taco Bell. It's pretty strict when eating a bean burrito, because it's prepared with oil, is considered an act of rebellion, user.
Remember, though, most people aren't religious, even in Eastern circles (except Copts, Byzantines and Maronites, who are fucking crazy religious). Most other Easterners I've encountered are mostly C&E Christians, just as many Western people are.
