So, which STEM degree is THE best one to get (in undergrad)?

Math or CS from a Top 10 school. Either of these from HYP will land you a sweet Wall St. or SV job.

Electronic Engineering. It's interesting (like physics), one of the more mathematical engineering degrees, pays really well, and lets you move into other fields with relative ease. This is subjective, though. Honestly, if you're looking at a mathematical STEM degree, then quite honestly the one you're most interested in - or leads to the most interesting career for you - is the best one at undergrad.
For me, it was physics. I've had no problem with job offers, and haven't had my options limited in any way when applying for academic roles, since people like interdisciplinary research these days. Admittedly, employers look for you if you have an engineering or computer science background, but since I'm more interested in academia right now, physics was more appropriate.
