I also prefer medium user, for some reason when I was younger I liked medium-rare but then switched.

Depends on the steak cut.
A lean cut like tenderloin I take rare and fattier cuts with lots of marbling like ribeye, I'll take medium rare.

Good places, I will get a medium rare.

Get a good cut and it's not chewy.

I like medium. But I don't mind overcooked/well done meat in general, so I'm not too picky.

Heat adds flavor and improves texture to meat, so I don't get the blue rare thing besides "hurrr I'm an animal".

A good steak is never undercooked, it is only more burnt than when you first could have eaten it.

Sometimes when I see my roommates cutting steak pieces for stir fry or whatever i will snag a piece of raw steak and eat it. Its so fucking delicious. I bought a third pound of beef tenderloin once and cooked it blue rare and it was the best beef ive ever had, but i wouldnt eat a steak blue rare unless it was a beef tenderloin. Rare or medium rare for me otherwise
