i tried a pan smoked trout in a wok. came out pretty good.

Cure and dry them, then add them to any dish for some intense trout flavor.

This is a trout I smoked a few weeks ago. Tastes amazing in salads or in sandwiches.
This particalur fish gave me the best result yet, and I think it's because of the way I salted it/drained it for 12 hours prior to the smoking, which I think is common for smoking fish cold, but not as much under heat.

Otherwise pack them up in tinfoil with lemon, dill and whitewine and put them in the oven.
