95% of them start with a Mirepoix base or Holy Trinity which is just Mirepoix with the green pepper subbed in for the carrot component.

if it's celery you need to get rid of , go with the cajun trinity. make some muthafuckin gumbo

I also have a ton of carrots and onions, but you can use those for everything kinda. The celery is harder to get rid off.

Roast the carrots and onions together and make a mash out of them. For extra points, cover them with a bit of mustard prior to roasting and mash them with a bit of mayo.

Risotto Sofritto

Blend mirepoix into a puree.
Cook in a sauce pot for a few minutes and season.

Create a standard risotto.
Just before done, add the sofritto sauce and blend together.

Also had a bunch of bok choy that went bad cuz I didn't feel like eating stir fry and ramen every night.

1 cup of each and a clove of garlic into a pot. After it has all softened up add a can of tomatos and 2 cups of water and stock. Let it boil and add ⅓ of a cup of barley. Turn down to medium heat and let if simmer for 30 mins, or until the barley is tender. Is enought for 3 people to have a big lunch.

>cook beef in broth til done, about 2 hours
>remove bones/broth ingredients, add a cup barley,mirepoix and whatever vegetables you have flying around, add a bit of fishsauce/marmite/soysauce
>finish with parsley

I like to do this for a snack:

Saute some chopped shallot in butter, little garlic too if you want
Steam the bok choy leaves until tender
Top the leaves with the sauteed shallots and put some oyster sauce on top of it, careful not to use to much because of the saltiness.
Done.

Seconding this dude. Look up Cajun and Creole recipes, many or most use the Holy Trinity as a base. Sometimes chili recipes do too

Fennel's a great replacement for celery.

Very similar texture, but much more flavorful.

Celery lasts for a few months, you never have to get rid of it like its a spoilage emergency.
At the very worst you have to trim off a little bit more as it ages. Shit lasts forever if you keep it cold.

I've got the celery my grandfather came across with from the old country, his only possession except a few dented lira and the clothes on his back. He built a life, an empire, a family here, and its still nice and crisp too.
