Melt 2T butter in a heavy skillet over low heat. Add 1/4c brown sugar, allspice, and nutmeg and stir until sugar dissolves. Add 2 bananas sliced in half and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking. Remove bananas from pan to a serving dish. Bring sauce to a simmer and carefully add 1/4c of rum Flambe that shit and reduce to desired consistency

There are other applications and uses for the plantain at that point.
There are recipes for when it's green and for when it's matured and they are not at all interchangeable. But both stages can be very delicious.
As far as sweetness similar to banana, the yellow or matured stage is the one.

My pop used to make it like this:
Large ripe banana. Slightly brown is ok. Twelve ounces or so milk. Two or three good tablespoons of sugar. A few ice cubes. Blend it all until smooth.
That's it. I still do this all the time, it's delicious.

You can make them into something like pancakes. All you need is a banana and two eggs. Once cooked the texture is something like the middle piece of french toast pretty tasty though do be warned that they are a bitch to flip. I ended up adding vanilla extract and some cinnamon to get closer to that french toast taste.

The best banana dish I had was sliced up banana--I added some hot sauce and on the slices and some shredded sharp cheese (or swiss) My friend actually recommended me this (he's a chef at some fancy French place) I highly recommend it (even though it sounds kinda strange--since the foods don't usually go together) but it was delicious.
