My parents split up when I was a kid. My mom wasn't crazy about coffee. She likes it, has a French press and a burr grinder, but just drinks macro roasts. My dad went full Veeky Forums assburgers when he was single again and was drinking coffee roasted that day, from a Chemex and a lever espresso machine.
I spent some of my high school years with my dad and picked up his 'tism. Up until then I was indifferent to coffee. Didn't hate it, just didn't care.
I don't think people who once thought coffee was gross actually like coffee. I think they are just pretending.
