Where do I get/how do I make chick-fil-a sauce and texas pedal sauce? And how do I make Hollandaise sauce without fucking it up?

Thousand island with horseradish.

>3 egg yolks
>1 stick of melted butter (doesn't have to be clarified, it's fine to use the solids)
>lemon juice
>salt
>cayenne pepper

whisk egg yolks with lemon juice over bain-marie (double boiler).. whisk until yolks start to thicken a bit and then slowly add the melted butter while vigorously whisking
>the two liquids should emulsify, and youo should continue to whisk over the boiler until the sauce reaches the desired consistency
>once at said consistency, take off heat and season with salt and cayenne to taste

if it breaks, add a tablespoon of water and whisk til it comes together again.

Someone give me a new hot sauce or BBQ sauce to try. Preferably one you can get in a store.
