What's your favourite fish for Sushi? Can't go past horse mackerel imo.

Which seafood protein is the best for ceviche? I fucking love a good Kingfish ceviche.

Sea urchin is great. I've only had it 3 times because it's so expensive. It's a very mild ocean flavor with nice texture.

Sounds like sacrilege but the lean tuna I had I probably enjoyed more than the fatty. Both delicious but the lean tuna was just exceptional.The Yellow Jack, Red Clam and Spanish Mackerel were also great. They were all delicious though.

I eat salmon nigiri almost exclusivly. Every other fish tastes too fishy. Salmon has a nice neutral taste.

Proper sushi became a huge hit in the US. That garbage was just included so fussy faggots with child-like taste buds can go along with everyone and still order something.

'American' and 'American-style' is pretty much synonymous with 'fake' in the rest of the world though.

White tuna tataki with wasabi and soy instead of ponzu and bonito. Both are GODLY as sushi or sashimi.

What does the sear actually add to it? I'll admit I've never had it but it's purely because I feel that high quality fish often doesn't need anything else. How much flavour does the sear really add?

It's adds complexity in flavor and texture. Ironically I'm not huge on it with ponzu sauce, as I feel the wasabi and soy do a much better job of bringing out the nuances.

I just go to a cheap local buffet so mostly salmon and tuna. They only have the white buttery tuna at lunch and not the good steak stuff probably because the dinner buffet is 10 bucks more

Sushi just means the rice was cooked as sushi rice. You can roll a carrot on that rice and it would be sushi. Do some research before you spew retarded shit.

Please. Freeze your fish for at least 3 days before eating it raw. In it's early stages, Anisakis is not visible at naked eye.
