During the cold war we organized our agro system to create a massive surplus for foreign policy reasons. As a result market incentives for food production are all kinds of fucked up. Garbage food is available by the ton, but good food is a privilege reserved for the coastal elites. The FDA mandates meat/produce/food stuffs be disposed of after a relatively short period of time. There are plenty of "Freegans" across America to ensure usable "expired" food is fished out of dumpsters and eaten. I took an inventory of the cheese selection at a local cheesemonger once. The number of wisconsin cheeses in the good section were basically insignificant. All the good cheeses come from the coastal US or are imported from Europe

I lived for a few years in the midwest, the domestic selection is a bit more of an even split between california and the northeast, and of course europe is still strongly represented

Also lived in california, where, surprisingly, the selection is not unlike that of the midwest

The only local cheese that exists in the midwest that isn't complete crap is the "cheese curds" which are something that resemble mozzarella

Other than that it's mostly chemically modified sludge in a tub, or the worst which is when they label it "gouda" or something otherwise innocuous looking but it's really pasteurized process cheese food with liquid smoke added

There is top tier food made in America. The problem is the average American does not have access to it. Generally the best food require better ingredients and more human input than mass produced industrial food, so it costs a lot more. The common man in America isn't eating much if any of it.

It isn't just hicks. Walk into a regular supermarket even in a major metropolitan area and most of what they're selling is shit. If you want good stuff you pretty much have to go to a specialty store because overall American standards are pretty low. Those low standards keep our food cheap, though. And that's part of where we get the reputation for unhealthy food - standard issue meat and dairy products are so cheap we can just pile them on with abandon. That tendency to use low to mediocre quality ingredients and just supersize everything is common here. And we do have a reputation for doing it.

what's sad is that, at least on the Gulf Coast, it's not really all that much more expensive. Then again the Gulf Coast is also a relatively affordable part of the country to live in

I've got family in NOLA, so I get there often. But even there, where they have a more legit food culture than most of the country you still see the gap between food for the rich and the common man. If the rich guy is making red beans on Monday he'll use some artisan andouille in it. In the 9th they'll use Double D. That is different worlds (though both are tasty).
